When a ferromagnetic cookware is placed on the ceramic surface, currents are induced in the cookware and instant heat is generated due to the resistance of the pan. I've been cooking w/ propane for 30 years, Just the 2 of us now and don't do a lot of cooking anymore. Love this little burner.... It was tricky at first, it turns on w/ a magnetic field which is why the surface stays cool to touch. Not all cookware will work but a simple magnet test, if the magnet sticks to your pan, it will work on the burner. Fast, efficient, portable, safe, and great looking . Great for travel (just take the right pan!) You won't be disappointed. We love it!
